Lasagna

1 box of lasagna noodles. You can use any kind. I prefer Creamette just because I like the green box. 

1-2 lbs of ground beef, browned and drained. You can use ground turkey, sausage, or any kind of meat you like here. 

2 jars of pasta sauce. I have some that I have canned so I use those, but you can use anything here. My favorite is Prego. 

1-2 8 oz bags shredded mozzarella cheese

2 eggs

1 container ricotta or cottage cheese

Parmesan cheese

Salt and pepper and Italian seasoning to taste.

You can make your own Italian seasoning by adding equal parts of dried basil, oregano, rosemary, marjoram, and thyme.  I have a mixture I made using herbs from my garden after drying them.


Brown and drain your meat in large sauce pan, add pasta sauce to meat.  In a  9x13 glass or metal dish add a layer of meat sauce to bottom and spread evenly to cover. 

Put a single layer of uncooked lasagna noodles over this.

Next, mix your ricotta or cottage cheese, 1/2 cup Parmesan, 1 cup of mozzarella cheese, 2 eggs, salt, pepper, and Italian seasoning in a medium sized bowl. 

Spread a layer of this over the uncooked lasagna noodles.

Repeat this process until you have used all your meat sauce. 

Top with mozzarella cheese and sprinkle with more Italian seasoning for garnish. 

Cover and Bake in 350 degree oven for an hour, removing the foil the last 15 minutes so the top gets all bubbly and delicious looking. I place a cookie sheet under mine while baking because it sometimes will run over and burn in the bottom of the oven and you don't want that!! 

Remove from oven and let cool 10-15 minutes. 

Serve with a yummy salad and garlic bread or whatever sides you prefer!

You can also add your favorite bottle of wine and some candlelight. Every meal can be a gourmet meal! It's all about presentation!!
