I happened to have some salmon filets in the freezer that I cooked in a skillet in some olive oil, added the following ingredients,  and fried them in a skillet again after making them into patties! YUM!!

In a large mixing bowl:

1 or 2 large Salmon filets or 2 large cans of salmon, flaked.

bread crumbs, crackers, or u can use cauliflower rice which makes a great filler and is low carb!

salt and pepper to taste

1 tsp old bay seasoning

1/2 teaspoon garlic salt

1 cup celery diced

1/2 small onion diced

2-3 eggs depending on how many patties you want to make

Add all ingredients, mix together and form into patties.  Fry over medium heat in a large skillet  in a tablespoon or two of olive oil or oil of your choice until golden brown on each side, flipping a few times to keep from burning.

Serve with dill or tarter sauce. (My youngest prefers the tartar;) I will post my super easy dill and tartar sauce recipes!

Enjoy!!!
